WILDCRAFTING ACORNS : PREPARATION : LOCAL SUSTAINABILITY

WILDCRAFTING AND PREPARATION OF ACORNS:

  1. Search for oak groves where natives used to harvest. Your local library may have archeology records with viable maps. Such archeological sites will often have mortar holes in the rocks for pestles.
  2. Shell the acorns : Smash with a small sledge hammer, or a rock.
  3. Vitamix : Put the de-hulled acorns in the Vitamix with H20, and grind at high speed till you get a thick, cream-colored consistency.
  4. Leach tannins via a slieve : (nut bag, panty hose, painter's sleive) Hold the bag under cool running water for five minutes till the water runs clear. If the meal is not bitter, you have washed it enough. Alt. method #2 : Place nutbag full of acorn meal in a rapid moving river or creek for an hour. Alt. method #3 : Swish nutbag in a bucket of water till the meal is no longer bitter.
  5. Squeeze out as much water as you can, with your hands.
  6. Store meal in freezer, dehydrate, or vaccuum pack in fridge.
Nutrition : Acorns are also rich in nutrients. Percentages vary from species to species, but all acorns contain large amounts of protein, carbohydrates and fats, as well as the minerals calcium, phosphorus and potassium, and the vitamin niacin. Total food energy in an acorn also varies by species, but all compare well with other wild foods and with other nuts.[1]

ACORN KALE CRACKER RECIPE :
Cut : 3 Large Clusters of Fresh Organic Kale
Marinade Mixture : (Blend in Vitamix)
2 cups of Water
2 Lemons
1/4 cup Sesame Oil
5 Large Tomatoes
2 Onions
2 cups of Nutritional Yeast
3 cups of Ground Acorns
2 cups of soaked hulled sunflower seeds (soak at least four hours)
1/2 cup of black sesame seeds
1 ginger root
2 tbl. Curry Power
1 Jalapeno Pepper
2 tbl. Himalayan Sea Salt (substitutions : Miso, Shoyu, or Tamari)

Mix all the ingredients together and spread green goop onto sheets, and place into dehydrator for 24 hours, or until dry I use a Excaliber Dehydrator. This unit has four small rack and comes with screens, and another smooth surfaced sheet. Do not use the screens, as the mixture may stick and create a mess. Seal ingredients in a ziplock bag or air tight bottle, and refrigerate.

Wow! I think this is such a brilliant idea, Jim! I'm going to mention this to my husband, so we can possibly add to the mapping!!

Sorry to say, no more paw paws were found. I think I'm going to add some hunting time onto our schedule for this weekend. I've been working so hard on different projects, I need a paw paw break!

Lots of love to you!

Wendi

Jim, thanks for this post on wild crafted acorns and where to find them. Did you create the recipe?!? If so, I'm impressed. This is the first time I've visited your site, I like it. :-)
